Ingredients

  • 1 cup raw tahini paste

  • 3/4 cups water

  • 1/3 cups lemon juice (best if fresh-squeezed)

  • 2 cloves garlic

  • Generous pinch of salt

  • Fresh parsley (optional)

directions

  • Blend garlic (minced), lemon juice, and salt into raw tahini. This works best in a food processor but a whisk or fork are also totally fine.

  • The mixture should become thick

  • Begin to slowly mix in water until you’ve reached your desired consistency

  • Serve drizzled over roasted vegetables or meats, toss into a salad for a bright, creamy and lemony dressing, or plate in a serving bowl with a fresh parsley garnish!
